Michael's Apple Pie

Double Pie Crust
1/2 C (1 stick) Unsalted Butter
3 T Flour
3 T Water
2 tsp Lemon Juice
1 tsp Cinnamon
1/2 tsp Nutmeg
1/2 C White Sugar
1/2 C Brown Sugar
8 Granny Smith Apples, peeled, cored, and sliced

1. Preheat oven to 425.  Melt the butter in a saucepan.  Stir in flour.  Add water, lemon juice, cinnamon, nutmeg, white sugar, and brown sugar.  Bring to a boil.  Reduce temperature and let simmer.

2. Place bottom pie crust in 9" deep dish pie plate.  Fill with apples, mounding slightly.  Cover with a lattice work of crust.  Slowly pour the butter and sugar mixture over the crust so that it does not run off.

3.  Bake 15 minutes in the 425 oven.  Reduce the temperature to 350 and continue baking for 35-45.  Stop baking at whatever time the apples are able to be pierced easily.
